From Aerospace Engineer To Pastry Chef And Charcuterie Expert – A Savory N’ Sweet Story

When Catherine Wojick moved to Boise in 1991, she was an aerospace engineer – but, as someone who loved baking for friends and family, she always worked on her catering business on the side. She had a dream of going to culinary school, but her profession as an engineer kept her busy.
Then, in 2011, her husband was deployed to Afghanistan with the Air Force. With four kids and a lot of milestones in her life going on at once, Wojick decided to make a huge change: She quit her job, took culinary training in pastry, and launched Savory N’ Sweet, a small business dedicated to creating locally sourced charcuterie boards, boxes, and grazing tables.
“Initially I wanted a very small bakery, but [the] capital was tough. So, I catered as well,” Wojick explained over an email interview. “I quickly realized there are a lot of good caterers here, so I wanted to set myself apart … and completely changed the focus of my business.”
The risk was rewarded – not only in capital, but also because the experience was the best Wojick could’ve asked for. “I love the idea of community, gathering, and, of course, chatting … So [charcuterie boards] allow me to be upfront with my clients.” Of course, grazing tables offer some of the most memorable interactions. “I love that grazing tables bring guests to a focal point, and that there’s a chance that someone at a wedding who is there solo [to] meet someone while noshing on the graze!”
But, how does a charcuterie business survive during the pandemic? “During the pandemic, I had at least 8 weddings reschedule to 2021, which, of course, affects the bottom line,” Wojick recalls. “So, I had to think of boxes that would still keep my aesthetic but appeal to families hunkering down at home, while giving them a deal that wouldn’t hurt their budget.” These beautiful, affordable boxes were also useful for families that wanted to support and enjoy local artisans.
During the pandemic, Sweet N’ Savory also delivered – however, it surprised her just how many people kept up with their deliveries as lockdowns went away! “I got to a point where I was delivering every single day and even increased [the delivery price], but nope! … I had to cut it out, because it took me out of my brick-and-mortar for too many hours.”
Ultimately, however, the success of Savory N’ Sweet can be attributed to the lessons Wojick learned over the years – the constant drive and need to stay a few steps ahead. The competition has increased, but she’s always willing to go the extra mile to get the best ingredients possible.
